Stepping through the gates of Grassini Family Vineyard is like walking into a haven for fine wine growers. Tucked back in it’s own protected canyon, steep hillsides composed of well-drained ultra fine clay loam soils packed with minerals surround a warm valley floor. Put together with extreme temperature swings between day and night and the vineyard is ideal for growing complex and lush wines that maintain great acidity. The sauvignon blanc we make from this site is concentrated and rich, yet elegant and bright with healthy acidity and substantial depth of flavor. Layers of succulent peach, honeysuckle and guava give way to crisp grapefruit and citrus notes with juicy acidity that creates a long lingering finish. The wine is fermented cold and slow over a 28+ day period and then aged in a combination of neutral French oak and stainless barrels.
